The beautifully colored parrot fish is known to change its shape, color, and even gender during its life. Feeding on coral and algae gives parrotfish a sweet, shellfish flavor. It is a unique flavor. The fillets are white, meaty, and easy to sauté or braise. In Polynesia, it is served raw and was once considered "royal food," only eaten by the king.
