Marinated Grilled Quail

Ingredients

 2 Quail Butterflied (no quantity on the website)
 2 tbsp Tomato Paste
 1 tbsp Mustard
 1 tbsp White Vinegar
 1 tbsp Corn Oil
 1 tbsp Seven Spices
 1 tsp Ground Black Pepper
 ½ tsp Dried Onion Powder
 ½ tsp Dried Curry Powder
 ¼ tsp Cardamom Powder
 1 tsp Dried Ginger Powder
 ½ tsp Cinnamon Powder
 1 tsp Salt2 tablespoon tomato paste

Steps

1.For the marinade, add all the above ingredients except the quail in a small bowl &
whisk them well until they are combined
2.Place the butterflied quail in large oven bag or into a large deep dish & pour the
marinade over them. Massage the marinade into the quail. This can be done by sealing
the bag & massaging the outside of the bag or, using your hands to massage the quail in
the dish
Set aside for 2 hours at room temperature, or refrigerate overnight.
3.For grilling, preheat the oven to 250 degrees, place the quail onto the oven tray so
they are all flat & skin- side down. (reserve the leftover marinade that is left in the bag
for basting)
4.Cook for 10 minutes then take them out of the oven to brush them with the
remainder of the marinate. When you return the tray to the oven, rotate it to ensure
that the quail us fully cooked.
5.Cook for another 5-10 minutes until the skin is nicely colored & the quail is cooked but
still slightly pink
6.Rest the quail for 5 minutes before serving.
